Step 1 - Heat grill to medium-high heat. Rub with cut onion so grill doesn’t stick.
Step 2 - Combine the beef, 1 tbsp cumin, egg and a little diced red onion.
Step 3 - Shape mixture into equal patties. Make patties as thin as possible, they will bunch and shrink later.
Step 4 - For the salsa topping: Combine diced tomatoes, red onion, cilantro and garlic in a bowl and mix. Add lemon juice and lime juice and mix again. Add salt, pepper and cumin to taste. Add a jalapeno pepper for added heat, if desired.
Step 5 - Place patties on grill, cover and cook 5-8 minutes. Turn patties and cook about 5-8 minutes longer. Do not squish or press down on patties while on grill, this will cause the patty to lose it’s juices.
Step 6 - Top each patty with a cheese slice and cook one minute or until cheese begins to melt. Meanwhile, place buns cut side down onto grill to toast slightly..
Step 7 - Assemble the burger: Spread chipotle mayo evenly on each bun and layer with a burger patty, salsa mixture and avocado.
