Jamaican Jerk Rub
This flavorful jerk rub has all the ingredients to make those delicious dishes reminiscent of Jamaican cuisine. The Allspice is the shining star of this blend but the habenero pepper does make a subtle appearance, lending a spicy but not burn-your-mouth off flavor. With faint hints of sweet spice from the cinnamon and nutmeg, the blend delivers an amalgam of rewarding flavors in one pinch. It’s great on any meats but it’s stellar on chicken.

Jerk is a cooking style native to Jamaica where chicken is rubbed in very very hot spices. Fortunately for those who don’t like their tongue burned off, this rub is very mild. The flavor is more in the blend of savory and sweet spices rather than the peppery heat. But it does taste very authentic to Jamaican Jerk seasonings without the intense burn. For those who do love heat, the habenero pepper is still a part of the cast it’s just not the leading actor. Our kitchen staff recently made a mouthwatering grilled jerk chicken with roasted pineapples and all we needed was a fruity drink with a little umbrella in it to felt like we right there in Jamaica!

When Austin Becker volunteered to teach English in Africa in 2006, part of his duties were to cook and plan meals for all the folks traveling with him. But all the folks traveling with him hated his cooking (and so did Austin). Instead of throwing cooking out the window he embraced his shortcomings and taught himself to cook, resulting in Pacific Spice Company. He is a nine to fiver by day and a spice drying and blending entrepreneur by night. Austin’s journey proves that when someone says you’re not good at something, go ahead and be great at it.
